This recipe is easily meal prepped and ready for a lunch on the go. You can make as many or as few servings as needed in the same amount of time.

Prepare Rice
  1. Pour jasmine rice into pan and rinse twice until water runs clear.
  2. Put pan on burner and pour in 1 1/3 cup water for every cup of rice.
  3. Put lid on pan, and turn burner onto high until it reaches a rolling boil.
  4. Once water is boiling turn burner to medium-low so it continues to simmer.
  5. Let simmer for 15-20 minutes or until rice has risen above water, and water is absorbed.
  6. Turn burner off, and keep lid on until ready to serve.
Egg Roll in a Bowl
  1. While rice is beginning to boil, combine your soy sauce and rice vinegar.
  2. Add your diced garlic and ginger into the soy sauce mix.
  3. Heat your pan onto medium and coat with a thin layer of oil.
  4. Once pan is heated through, add your ground pork and let it begin to brown.
  5. Pour soy sauce mix over the ground pork and let it finish cooking through. You should see all the meat turn gray and some parts begin to have brown bits on the edges.
  6. Once the meat is cooked through, toss in your shredded veggies and put a lid on top to let steam until veggies are wilted.
  7. Serve with the cooked rice.
