A great week-night quick meal that serves up deep flavor in just one pan.

Ingredients

Instructions

  1. Slice chicken breasts in half lengthwise, and season with salt and pepper.
  2. Heat a large skillet, and put 2 tablespoons oil in. Sear chicken breasts on both sides.
  3. Add 1 cup chicken broth and top with a lid until cooked through.
  4. Set cooked chicken aside onto a plate and cover with foil.
  5. Add 1 tablespoon oil, and sauté all vegetables.
  6. Prepare vermicelli according to package ingredients.
  7. In a small bowl combine soy sauce, peanut butter, rice vinegar, and sesame oil.
  8. Chop chicken into bite sized pieces.
  9. Add chicken to sauteed vegetables, then pour sauce over, stirring well.
  10. When everything is fully combined, add vermicelli noodles and stir well.
  11. Serve with crushed cashews and green onions.

Notes

Soy sauce can be substituted for Coconut Aminos in a 1 to 1 ratio.


Peanut Butter can be substituted for Almond, Cashew, or Sun Butter.
