This roast is juicy, tender, and tangy. Great to use for sandwiches or with roasted potatoes.

Ingredients

Instructions

  1. Combine all seasonings into a small cup.
  2. Pat roast dry, and press seasonings on all sides. Let rest during next step.
  3. Coat bottom of slow cooker with oil and add onion pieces.
  4. (If you want to make a one pot meal, add 1 bag of golden or fingerling potatoes on top of onions.)
  5. Place roast on top of onion. Pour tomatoes on top of roast.
  6. If roast is thawed, cook on high for 4 hours, or low for 6-8.
  7. Once it reaches internal temperature of 145 degrees, remove roast from crockpot and let rest for 15 minutes, covered.
  8. Enjoy!

Notes

If you are nightshade intolerant, remove paprika, chili flakes, and tomatoes. You can use 1/4 cup of apple cider vinegar poured on top of the roast to mimic the acidity of the tomatoes and help tenderize the roast.
