This zesty soup is full of deep flavor that keeps you feeling nourished and warm on these cold rainy days.

Instructions

  1. In a stock pot, cook onion in oil until translucent.
  2. Add chicken and cook for 5-7 minutes or until just turned white all the way through.
  3. Add garlic, corn, and tomatoes and cook for 5 minutes more.
  4. Now add Salsa verde and bone broth. Let simmer for 15 minutes.
  5. Just before serving, add in diced cilantro and let wilt.
  6. Can be served with chips and plain greek yogurt to use as sour cream.

Notes

You can also combine all ingredients, except cilantro, in a crockpot and slow cook for 4-6 hours on medium heat. Then add cilantro right before serving.
