This loaded potato is an easy way to serve a delicious, filling meal, the whole family is sure to enjoy.

Ingredients

Instructions

  1. Rinse and prick potato with a fork on all sides
  2. Bake potato in an oven at 450 degrees for 1 hour, or until a fork is easily pushed into it. You can also steam it in the microwave for 6 minutes, making sure to flip it half way through.
  3. Season all sides of chicken breast with salt, pepper, and garlic powder.
  4. Sear in a frying pan or on a grill on both sides for 3-5 minutes on medium heat until it reaches an internal temp of 170 degrees.
  5. Let chicken rest for 5 minutes to retain moisture, then diced into bite size pieces.
  6. When potato is finished cooking it, slice it in half and slice it crosswise to open it up.
  7. Top the potato with chicken, mozzarella, bell pepper, kalamata olives, plain greek yogurt, and green onions.
  8. Enjoy!
