These roasted potatoes are amazing with the deep truffle flavor complemented perfectly with the bold parmesan and spicy black pepper.

Ingredients

Instructions

  1. Fill a medium sized pot with water and bring to a boil.
  2. Add 1 Tbsp Kosher Salt to the water.
  3. Once water is boiling add potatoes for 15-20 minutes or until a fork pierces easily.
  4. While potatoes are boiling, turn on oven broiler on high.
  5. Cover baking sheet with parchment paper.
  6. Once potatoes are done boiling, place them on baking sheet and smash or cut them open.
  7. Drizzle white truffle oil on potatoes, along with black pepper, salt, and dried parsley.
  8. Put potatoes under broiler for 5 minutes.
  9. When the edges of the potatoes are golden and crispy, cover with parmesan cheese and serve.
  10. Enjoy!
