This delicious easy to prepare roast is dripping with intense flavor balanced between the depth of the beef and the tanginess of the pepperonis. This dish is sure to have your family asking for seconds.

Ingredients

Instructions

  1. In a small bowl combine seasonings.
  2. Wash potatoes and carrots, and dice carrots into small rounds.
  3. Fill bottom with most of the potatoes and all of the carrots
  4. Generously dust bottom of roast with 1/2 of seasoning mix and pat in.
  5. Place roast in slow cooker, bottom side down, then pour remaining seasonings on top and sides.
  6. Place the rest of the potatoes along the sides of the roast.
  7. Pour the entire jar of peppercinis and 1 cup of beef broth on top of the roast.
  8. Turn on high for 8-10 hours. (If you have a high quality roast, cook for 6 hours before checking for tenderness.)
  9. Once roast has finished cooking, set aside for 10 minutes to let rest before serving.
